    Polenta Schmarren

Polenta Schmarren

with Vanilla ice cream from our farm Schlattgut

Ingredients for 2 people 
  • 500ml milk
  • 50g butter
  • 1 pinch salt
  • 100g polenta griess
  • lemon zest of 1 lemon
  • 100g sour cream
  • 3 tbsp sugar
  • 1 vanilla pod
  • 3 eggs
  • icing sugar
  • seasonal fresh fruits to serve
PREPARATION

Bring the milk to the boil in a saucepan with 20 g butter and 1 pinch of salt. Pour in the polenta, stirring constantly. Add the lemon zest and sugar and simmer on the lowest heat for 20 minutes. Stir regularly so that nothing burns. Then pour the mixture into a bowl and leave to cool slightly. Stir the sour cream into the mixture.

Separate the eggs into egg white and egg yolk. Stir the egg yolks into the polenta mixture. Beat the egg whites until they are semi-firm and fold them into the mixture until fluffy.

Preheat the oven to 200 °C convection oven.

Melt the remaining butter in a large, preferably ovenproof pan. Sprinkle 1 tablespoon of sugar into the pan and pour in half of the polenta mixture. Bake in the oven over a medium heat for 1-2 minutes.

Place the pan in the oven and bake until the top is browned. Remove the Schmarren from the oven and tear into pieces with forks. Sprinkle everything with icing sugar and garnish with the fresh fruit. Serve with ice cream and enjoy!
